For marinade: 4 garlic cloves, crushed 2 sprigs of fresh thyme 2 sprig of fresh rosemary 1/2 cup dry red wine 1/2 onion, chopped 2 Tablespoon olive oil 1 flank steak Salt and pepper
For chimichurri: 2 garlic cloves 1/4 cup packed fresh parsley 1/8 cup packed fresh oregano leaves 1/8 cup rice vinegar Juice of 1/2 lemon 1/2 cup olive Salt and pepper 1/4 cup feta
For marinade: Combine all ingredients except steak in a sealable plastic bag and blend. Add steaks and marinate for at least 4 hours.
Add all chimichurri ingredients except salt and pepper to a food processor and process until blended. Transfer to a bowl and season to taste with salt and pepper.
Light a grill. Remove steaks from marinade and season with salt and pepper. Place steaks on a hot grill and cook for 5 minutes on the first side then 4-5 minutes on the second side, or until medium-rare. Transfer to a cutting board and slice crosswise. To serve, fan steak slices on a plate and drizzle with sauce. Sprinkle with feta and serve immediatley.
