5 Tablespoons lime juice 1/4 cup vegetable oil 4 garlic cloves, crushed 1 jalapeno pepper, halved lengthwise, seeded and thinly sliced 2 Tablespoons fish sauce 2 teaspoons sugar Salt and pepper to taste 8 skin on, bone in chicken thighs
Combine all ingredients except chicken in a resealable plastic bag and mix well. Add chicken and marinate in refrigerator for 4 hours. Light a grill. Lightly brush thighs with oil and season with salt and pepper. Grill over medium heat for about 30 minutes, turning once or twice.
