Beer Battered Fish & Chips

Ingredients

3/4 cup gf mayonaise
3 Tablespoons chopped fresh tarragon
1 Tablespoon cider vinegar

1 cup gf flour
1-1/2 teaspoons Old Bay seasoning
1-1/4 cups gf beer
Vegetable oil for frying
1-1/2 lbs halibut

For potatoes:
8 russet potatoes
Peanut oil for frying
Salt
Directions
For mayo:
Whisk mayonaise, tarragon and vinegar in a small bowl; season to taste with salt and pepper.

For french fries: Pre-heat oven to 200 degrees F.
Peel potatoes and cut into 1/4" slices and then cut each slice into 1/4" strips.
Place potato strips into a large bowl of cold water.
Preheat oven to 200 degrees F.
Pour about 3" of peanut oil into a dutch oven/deep fryer and heat to 300 degrees F.
Drain potatoes and dry with a paper towel.
Working in batches, carefully slide potatoes into hot oil and fry for about 5-8 minutes. Potatoes should just start to turn golden.
Remove potatoes with a large slotted spoon onto paper towels.
Just before serving time, bring oil back to 300 degree F temperature and fry potatoes for about 5 minutes, until browned. Drain and salt. Transfer french fries to oven to keep warm.

For fish:
Add flour and Old Bay seasoning to a medium bowl and blend. Add beer and whisk until blended. Pour 1" deep oil into large heavy skillet to 350 degrees F. Sprinkle halibut filets with salt and pepper. Dip fish into batter and then carefully into hot oil. Fry pieces until golden, about 3 minutes per side. Transfer fish to paper towel to drain. Serve with potatoes and tarragon mayonnaise.

At this time there are 4 Gluten Free Beers on the market that I know of. Personally for flour I use Maple Grove gluten free pancake and waffle mix and mix that with Red Bridge Sourghum beer(it’s gluten free). You can use club soda with it for battering other things and taste great!

I tried this recipe last night. I had to add some more flour to the mixture to make it thicker like a batter. I also used Smart Balance Omega oil instead of the unhealthy Vegetable Oil. I thought it was pretty good. I’ll definitely fix this again.

This recipe needs some major adjustments to be worth the time. The batter was way too thin, and did not puff up at all. The beer needs to be decreased. If you add more flour you end up with cups of extra batter. Was this recipe tested in a real kitchen?

there are 4 gluten free beers on the market in the US at this time that I have found Bards Tale Ramapo Valley New Grist and Red Bridge It is possible to have a gluten free beer that tastes good. some are brewed from sorghum, rice, honey- no wheat or barley What flour do you recomend using in the batters?

Why would you use beer in a ”gluten-free” recipe? Barley is not gluten free and beer is made from hops and barley, or wheat if it’s a wheat beer. Are there any GF beers out there I should know about?

If you are unable to find GF beer or don’t wish to use beer for some other reasons you can try using soda water in the batter

I find this web site very helpful, however a lot of the packaged ingredients that you mentioned are not available in Canada.

Virginia, there’s a huge variety of gf (meaning gluten-free) flours available out there. Yvonne, there’s an article this month on this site about how there are several gf beers now available--beers that aren’t made with wheat or barley.
