Ingredients
1 mango, peeled, pitted and diced 1/4 cup fresh cilantro, chopped 1/4 cup red onion, chopped 1 Tablespoon fresh orange juice 1/2 jalapeno pepper, minced 1 teaspoon lime zest 1 garlic clove, minced 2 Tablespoons olive oil Salt and freshly ground black pepper 1-1/2 lbs. halibut fillet
1 cedar plank (can be purchased at many grocery stores in the fish section or at most kitchen shops)
Directions
Soak the cedar plank in water for at least 30 minutes prior to cooking fish.
While the board is soaking, prepare the salsa. Combine the first 7 ingredients in a small bowl. Mix in 1-1/2 tablespoons olive oil, then season with salt and freshly ground black pepper to taste. Set aside.
Prepare the grill.
Rub the halibut fillet with olive oil. Season the halibut fillet with salt and freshly ground black pepper.
Remove the plank from the water and pat dry. Spray or lightly brush one side of the plank with olive oil. Place the halibut fillet, skin side down on the plank. Arrange the plank on the grill - off heat. (If using a charcoal grill push the coals to one side. If using a gas grill, turn one side off and put the plank on the "off-side".) Cover the grill and cook for about 15-20 minutes or until the halibut is just cooked through. Using a long metal spatula, transfer the halibut to plates. Top with chili-mango salsa and serve.
