2 cups gf beer 2 lbs chicken wings, sectioned into 3 pieces and tips discarded (save tips for chicken stock) 2 teaspoons kosher salt 1 teaspoon fresh ground pepper 1 teaspoon paprika 1 Tablespoon chili powder 1/2 teaspoon celery seed 1 Tablespoon olive oil
Directions
Place the wing segments in a sealable plastic bag and add beer. Place in refrigerator and marinate for 24 hours. Strain off beer and placed wings in a large bowl. In a small bowl mix together salt, pepper, paprika, chili powder and celery seed. Add spice ingredients to bowl of wings and toss to mix evenly. Heat a grill. If using a gas grill heat both sides to high. When hot, place wings on one side and turn the heat off that side. Close lid and let grill for 15 minutes. Turn the heat on the off side and turn the heat on the off side. Move wings to opposite side of grill and repeat for 15 minutes. Repeat this process until wings are cooked through. For a coal grill, cook wings over indirect heat, turning frequently. Wings are done when there is no pink next to the bone. Serve immediately.
