Grilled Bison Steaks with Sweet Hoisin Sauce

Ingredients

1/4 cup vegetable oil
2 medium shallots, thinly sliced
2 scallions, diced
4 garlic cloves, minced
1 Tablespoon ginger, peeled and minced
1/4 teaspoon hot red pepper flakes
1/3 cup chopped cilantro
1/3 cup gluten-free/wheat-free hoisin sauce
3 Tablespoons gf soy sauce
1/2 cup gf Beef Stock
2 Tablespoons honey
2 Tablespoons unsalted butter
4 Bison strip steaks, fat trimmed
Directions
Prepare the grill.

While the grill is heating, heat 1/4 cup of oil in a medium saucepan over medium heat. Add the shallots, scallions, garlic, ginger, hot red pepper flakes and cialntro; cook, stirring occasionally, until vegetables are softened, about 4 minutes. Add the gf hoisin, gf soy sauce, and gf beef stock. Bring to a boil; continue to cook, stirring occasionally, until sauce thickens, about 5 minutes. Keep warm over low heat.

Season the steaks on both sides with salt and freshly ground black pepper. Grill the steaks over high heat for 4 minutes per side (for medium rare). Transfer the steaks to a plate and tent with foil; let rest for 5 minutes before serving.

Place the sauce back over medium heat and whisk 2 tablespoons unsalted butter. Adjust seasonings to taste with salt and freshly ground black pepper.

Cut the steaks into thick slices and arrange on dinner plates. Spoon the sauce over the top and serve.
