2-3/4 lbs. medium sized Yukon Gold potatoes, peeled and quarterd 3 Tablespoons unsalted butter, room temperature 2/3 cup milk 1 Tablespoon gf dijon mustard Salt
Cook the potatoes in a large pot of boiling salted water until very tender, about 20-25 minutes. Drain well. Return the potatoes to the pot. Add butter and mash potatoes until almsot smooth. Mix in 2/3 cup milk and the gf dijon mustard. Season to taste with salt. Serve.
