Ingredients
1-1/2 cups raisins 1 cup rum 3/4 cup unsalted butter 2 cups gf flour 1 cup sugar 1 teaspoon ground nutmeg 1/4 teaspoon salt 5 firm pears, peeled and cut into 1" pieces 4 large Gala apples, peeled and cut into 1" pieces 2 Tablespoons lemon juice 1 Tablespoon gf flour 1/4 teaspoon salt GF Vanilla ice cream
Directions
Add raisins and rum to a small saucepan and simmer for 3 minutes. Remove from heat and ignite rum with a match. Transfer 2 Tablespoons to a small bowl and set the rest aside. In a medium saucepan, melt butter over low heat. Simmer until butter is golden brown. Let cool. Mix flour, sugar, nutmeg and salt together in a medium bowl. Add the browned butter and the reserved 2 Tablespoons rum; stirring until mixture clumps. Pre-heat oven to 350 degrees F. Butter a 13"x9"x2" glass baking dish. To a large bowl, add pears, apples, lemon juice, 1 Tablespoon gf flour, 1/4 teaspoon salt, 1/2 cup sugar and raisins; toss to blend. Transfer to baking dish and crumble topping evenly over top. Bake for about 55 minutes, until golden and bubbling. Let cool for 30 minutes and serve with ice cream.
