Marinated Scallops

Ingredients
3 Tablespoons gf soy sauce
1/4 teaspoon gf hot chili sauce
1-1/2 teaspoons fresh ginger, minced
1 teaspoon lemongrass, finely chopped
1 Tablespoon vegetable oil
12 large scallops, halved
12 thin slices of gf bacon, halved crosswise
24 wooden toothpicks, soaked in water for about 2 hours
Directions
In a medium bowl, combine gf soy sauce, gf chili sauce, ginger, lemongrass, and oil. Add scallops and toss well. Marinate for about 1 hour.
Preheat broiler.
Remove scallops from marinade. Pat scallops dry. Wrap each scallop in a slice of bacon and secure with a toothpick.
Place wrapped scallops on a broiler pan and broil until bacon becomes crispy, 2-3 minutes per side, turning once. Serve immediately.
Tips
These scallops are so good, we served them as an entree!
