Penne with Turkey, Sausage & Spinach

Ingredients

1 Tablespoon olive oil
1 small onion, chopped
3/4 lb cooked turkey or chicken, cut into 1 inch pieces
3/4 lb. gf Italian sausage
3/4 teaspoon freshly ground nutmeg
1-3/4 cup heavy cream
6 oz. gf penne
3 oz. fresh baby spinach leaves
3/4 cup Parmigiano Reggiano cheese, grated
Salt and freshly ground black pepper
Directions
Heat the oil in a deep skillet over medium high heat. Add the onions and saute until beginning to brown, about 5 minutes. Add the Italian sausage and cook, breaking up with the back of a spoon, until browned, about 10 minutes. Add the cooked turkey or chicken; saute for about 3 minutes. Add the nutmeg and cream; bring to a simmer. Season sauce with salt and freshly ground black pepper.

Meanwhile cook the gf pasta according to package directions. Drain, reserving 1-1/2 cups of the cooking liquid.

Add the cooked pasta to the sauce. Cook over medium heat, adding spinach in batches and tossing until wilted. Stir in 1/2 cup cheese and enough cooking liquid (from pasta) to moisten. Transfer to a large bowl. Sprinkle with remaining cheese and serve.
