Pork Tenderloin Kebabs with Pineapple

Ingredients

1/2 cup gf soy sauce
3 Tablespoons honey
2 Tablespoons lime juice (juice from about 1 lime)
1-1/2 tablespoons fresh ginger, peeled and minced
1/4 cup canola oil
2 garlic cloves, minced
1/4 teaspoon five spice powder
1/2 teaspoon freshly ground black pepper
1 pork tenderloin, cut into 1 inch pieces
about 30 1-inch pieces of pineapple
2 small zucchini’s cut into 1/2 inch slices
1/2 red onion, cut into 1 inch pieces
Directions
Combine the gf soy sauce, honey, lime juice, ginger, canola oil, garlic, five spice powder and pepper in a large zip lock bag. Add the pork tenderloin pieces. Seal the bag and let marinate in the refrigerator for about 1 hour (turning periodically).

Prepare the grill.

Remove the pork from the bag, reserving about 1/2 cup of the marinade. Thread the pork, pineapple, zucchini and onion, alternating as you go, onto about 8 skewers. Place the kebabs on the grill and grill fro about 8-10 minutes, turning halfway through and basting periodically with reserved marinade, or until the pork is cooked through. Transfer kebabs to a platter and serve.
