Makes 4-6 servings. Difficulty
6 medium red potatoes, cubed 1/4 cup milk 1-1/2 Tablespoon unsalted butter 2 green onions, chopped 1/4 cup crumbled feta Salt
Place the cubed potatoes (unpeeled), in a large saucepan and cover with water. Bring to a boil. Reduce heat to medium and cook at a low boil until tender. Drain. Return potatoes to the pan but leave it off heat.
Add the milk and butter to the pan. Using a potato masher, mash the potatoes until fairly smooth. Stir in the green onions and feta. Season to taste with salt and freshly ground black pepper.
