Single Chocolate Cheesecakes

Ingredients

1 container Glutenfreeda’s Sugar Kookies, baked, cooled*
3 Tablespoons unsalted butter, melted
8 ounces whipped cream cheese, at room temperature
1/4 cup sugar
2/3 cup creme fraiche, at room temperature
3.5 ounces dark chocolate, chopped
2 large eggs
2 teaspoons vanilla
2 cups whipping cream
1 Tablespoon sugar
Fresh strawberries, topped and sliced vertically

Directions
Preheat oven to 350 degrees F. Place foil cupcake liners in a 12 cup muffin tin.
Bake the cookies according to package instructions then let cool completely. Break cookies into chunks and place in a food processor. Add melted butter and process until crumbs form. Spoon about 2 large spoonfuls of crumbs into each foil cup. Press a 1/4 measuring cup on top of the crumbs in each cup, pressing down to pack the crumbs firmly in the bottom of each foil cup. Place muffin tin in the oven and bake for 5 minutes. Remove from oven and leave the oven on.
Add the chocolate to the top of a double boiler over a pan of simmering water. Stir chocolate until melted; remove from water and heat.
Add the cream cheese and sugar to a medium bowl and beat with a hand held mixer at medium speed until smooth. Add creme fraiche and beat until smooth; then add the eggs and vanilla and beat until all is smooth. Add chocolate and mix until incorporated and completely blended. Pour batter into the foil cups, about 3/4 full. Bake for 15 minutes. Remove from oven and let cool. When cool; place in refrigerator until ready to serve. When ready to serve; whip cream adding sugar halfway through whipping. Place whipped cream in a small plastic bag and cut one of the bottom corners of the bag off. Squeese whipped cream through the bag, decoratively on top of each cheesecake. Place a strawberry slice on top of the whipped cream and serve.
Tips
This dessert is as beautiful and it is delicious and can be made ahead and refrigerated (up to 4 days) until you are ready to serve.
