24 large cremini mushrooms, stems removed ¼ cup olive oil 1 teaspoon chopped rosemary plus one 3” rosemary sprig 3 Tablespoons chopped prosciutto 6 ounces goat cheese ; divided into 24 equal pieces
Preheat oven to 400 degrees F. Add mushrooms to a large bowl and toss with olive oil and rosemary. Season to taste with Kosher salt and fresh ground pepper. Place mushrooms on a baking sheet, rounded sides up and bake for 30 minutes. Let cool. Stuff each mushroom with equal amounts of goat cheese and sprinkle tops with prosciutto. Serve.
