Juice of 1 lime 4 Tablespoons fish sauce 2 Tablespoons gf soy sauce 1 red chile, seeded and minced 1-1/2 lbs. halibut, cut into 1" pieces 1-3/4 cups coconut milk 1 Tablespoon Roasted Red Chili Paste* 2 teaspoons curry powder
In a shallow dish, combine lime juice, 2 Tablespoons fish sauce, soy sauce and chile; mix to blend. Add fish and cover the dish with plastic wrap and let sit for a minimum of 2 hours or overnight. In a small bowl, bring coconut milk to a boil over medium heat. Add curry powder, roasted red chili paste and remaining 2 Tablespoons fish sauce. Reduce heat to lowest setting and simmer for 10 minutes. Add the fish and the marinade to coconut milk and simmer for 5 minutes. Serve over steamed rice.
