8 ounces rice fettuccine 1-1/2 teaspoon salt 3 teaspoon oil 1 red bell pepper, cut into strips 1 green bell pepper, cut into strips 1/2 onion, sliced 1 garlic clove, minced 3 chicken breasts, skinned, boned and sliced into thin strips 1 teaspoon chili powder 1/4 teaspoon cumin 1/8 teaspoon cayenne pepper 1-1/2 cup cream
Boil pasta in water according to package instructions, adding 1/2 teaspoon salt and 1 teaspoon oil.
Heat a large skillet over medium-high heat. Add 2 teaspoons oil. When hot add onion, saute 3 minutes; add garlic, cook 1 minute more and remove.
Saute peppers about 3-4 minutes; remove.
Add chicken strips and cook until browned, about 7-10 minutes. Add chili powder, cumin, cayenne and remaining salt to chicken and mix well.
Reduce heat to low and add vegetables back to pan. Add cream and drained pasta. Mix well and cook until heated through, serve.
