1/2 cup pine nuts 3 teaspoons olive oil 2/3 cup long-grain white rice 1 1/3 cups water 1/2 cup fresh basil, finely chopped Salt and pepper to taste
In a 1 1/2 quart heavy saucepan, cook pine nuts in oil over medium heat until golden. Transfer to a bowl. Add rice to oil and cook over medium heat, stirring for about 1 minute. Add water and bring to a boil. Cover rice and cook over very low heat, about 20 minutes. Remove pan from heat and let rice sit for 5 minutes, do not open lid. Fluff rice with a fork and stir in basil, pine nuts and salt and pepper to taste.
