10-12 small shrimp (41-50 count), shelled and deveined 1 garlic clove, minced 1 teaspoon freshly squeezed lemon juice 1 Tablespoon Italian parsley, minced 2 Tablespoons ripe tomato, chopped 1 Tablespoon extra virgin olive oil Salt and freshly ground black pepper Gf fettucine or angel hair pasta 2 teaspoons freshly grated parmesan cheese
Cook gf pasta according to package instructions.
Heat oil over medium-high heat. Add garlic; cook for 30 seconds or until fragrant. Add shrimp; cook for about 1 minute or until almost completely opaque. Add lemon juice. Add tomatoes and parsley. Toss to combine thoroughly, about 30 seconds. Adjust seasonings with salt and freshly ground black pepper.
Drain pasta. Place pasta on plate, top with shrimp mixture and sprinkle with freshly grated parmesan cheese.
This is a very easy, light dish to throw together for a quick lunch or dinner.
