Makes 12 muffins or 6 jumbo muffins Difficulty
2 cups gf flour 1 teaspoon baking soda 1/2 teaspoon baking powder 1 teaspoon salt 3/4 cup sugar 1/3 cup vegetable oil 1-1/2 cup buttermilk 3 eggs Zest from 1 orange 1/2 ounce unsweetened chocolate, grated
Butter and honey for serving.
Pre-heat oven to 475 degrees.
Grease muffin tin, or use paper muffin cups.
Sift together flour, baking soda, baking powder and salt. In a separate bowl, whisk together eggs, vegetable oil and buttermilk. Pour egg mixture into dry ingredients; stir to combine. Gently stir in orange zest and chocolate until just combined. Pour batter into greased muffin cups. Bake for 15 minutes, or until an inserted toothpick comes out clean.
Serve with butter and honey.
