Banana Pecan Muffins

Ingredients

1-1/3 cup gf flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
5-1/3 Tablespoons unsalted butter, softened
2/3 cup sugar
2 eggs, beaten
1 cup banana, mashed
1/2 cup pecans, chopped
Directions
Preheat oven to 375 degrees F. Grease a muffin tin or line with paper cups. Whisk together flour, salt, baking soda and baking powder. In a large bowl beat together butter and sugar until blended. Add the flour mixture to the butter mixture, beating until blended. Gradually beat in eggs. Mix in bananas and pecans. Divide batter into 12 muffin cups. Bake for 18 to 20 minutes, until an inserted toothpick comes out clean.

I use this as a basic gf muffin mix but I use only 1 cup of gf all purpose flour. I have added blueberries to them in the summer and dried cranberries and pumpkin in the fall.

I substituted 1/2 oat flour and 1/2 rice flour with 7 tbsp. melted butter and they were very, very good.

These muffins are great. You would never believe they are gluten free.
