4 salmon filets, with skin 8 large sorrel leaves, cut into thin strips 3/4 teaspoon garlic, minced 3/4 cup cream Salt and fresh ground pepper
Directions
Preheat oven to 450 degrees F.
Place filets, skin-side down on an ungreased baking sheet. Sprinkle with salt and pepper. Bake filets for 10-12 minutes.
While salmon is baking, in a small heavy saucepan, combine sorrel, garlic and cream and cook over medium-high heat until sauce is boiling rapidly and is slightly thickened. Remove from heat.
Lift filets from baking sheet, leaving skin behind.
Transfer filets to plates and top with sauce. Serve immediately.
