Wild Rice Salad w/Sausage

Ingredients

2 Tablespoons white wine vinegar
1 Tablespoon gf stone ground mustard
1/3 cup olive oil
Salt and freshly ground black pepper to taste
1 pound gf Italian or Andouille sausage, cut into bite size pieces
2-1/4 cups cooked wild rice (about 3/4 cups uncooked)
2-1/4 cups cooked long grain white rice (about 3/4 cup uncooked)
2 celery stalks, thinly sliced
12 ounces seedless red grapes, halved
Directions
Cook both rices according to package instructions.

Whisk white wine vinegar and stone ground mustard in a bowl. Add olive oil. Season to taste with salt and pepper.

Cook sausage over medium heat until cooked through. Drain on paper towels and let cool.

In a large bowl combine sausage, cboth cooked rices, celery and grapes. Add dressing and toss well to coat. Adjust seasonings to taste with salt and freshly ground black pepper.

Serve at room temperature.
