1-1/2 pound pork roast Salt and freshly ground black pepper Olive oil 1-1/2 cup fresh pineapple, diced 1/2 red onion, diced 1/4 cup cilantro, minced 3/4 cup ripe tomato, diced 1/2-1 jalapeno, minced (increase amount if more heat is desired)
Prepare salsa: Place pineapple, red onion, cilantro, tomato and jalapeno in a bowl; season to taste with salt and pepper. Set aside.
Light grill or preheat broiler.
Season pork on all sides with salt and freshly ground black pepper. Spray all sides of pork lightly with olive oil.
Grill pork roast for about 20 minutes, rotating to cook evenly. Remove from grill when internal temperature reaches 155 degrees F. Tent with foil and let rest for 5 minutes.
