1 pound salmon filet 1 lemon, thinly sliced 1 Tablespoon fresh lemon juice 1 teaspoon fresh thyme, chopped 1 Tablespoon fresh Italian parsley, chopped 3 garlic cloves, minced Salt & freshly ground black pepper 1 Tablespoon unsalted butter, melted
Directions
With a large piece of aluminum foil, make a boat by folding up sides (large enough to accomodate salmon filet). Lay lemon slices in a single layer on foil. Top with filet.
Spread top of filet with garlic and fresh herbs. Pour lemon juice over top. Season with salt and freshly ground black pepper. Let salmon marinate for 10 minutes.
Preheat grill.
Grill salmon for 5-6 minutes. Baste with melted butter, then continue to grill for an additional 5 minutes or until fish flakes easily with a fork. Serve immediately.
