1 3.5 lb. free range chicken, cut into 8 pieces 1/4 cup cilantro, chopped 1 Tablespoon fresh mint, chopped 1 inch piece fresh ginger 4 large garlic cloves 1/2 teaspoon cayenne 1 Tablespoon dried oregano 1 teaspoon cinnamon 2 teaspoons dried thyme 2 Tablespoons coriander 2 Tablespoons extra virgin olive oil 2 Tablespoons fresh lime juice Salt and freshly ground black pepper to taste
Add cilantro, mint, ginger and garlic to a food processor; pulse until chopped. Add next 5 ingredients (cayenne thru coriander) and pulse until blended. Gradually add oil and lime juice to the mixture, with the machine running, to form a paste.
Rub paste onto chicken. Cover and refrigerate up to 4 hours.
Light grill. Season chicken with salt and freshly ground black pepper. Grill chicken for 5-10 minutes on each side, or until done.
