1/2 cup gf hoisin sauce 1/2 cup fresh lime juice 4 garlic cloves, minced 4 teaspoons ginger, peeled and minced 1 salmon fillet, about 1-1/2 pounds 2 bunches green onions, trimmed 2 small eggplants, cut in 1 inch strips, lengthwise 1/2 pound asparagus, trimmed
Prepare grill. Combine gf hoisin, lime juice, garlic and ginger in a small bowl. Brush flesh side of salmon with the sauce. Grill fish, flesh side down for about 8 minutes. Carefully turn fillet. Brush with more sauce and continue to cook for another 5-7 minutes or until fish flakes easily with a fork. Grill vegetables alongside salmon. Brush all vegetables with sauce. Cook vegetables until done, turning occasionally; asparagus - 14 mintues, eggplant - 10 minutes, and green onions - 8 minutes. Serve immediately.
This may sound like a stretch for most kids, but the it is a wonderful way to get kids to try salmon and some different vegetables. The sweetness of the sauce makes just about anything taste good!
