Ingredients
2 red bell peppers, roasted, peeled, and seeded (reserve any juices) 1 pound fresh yellow fin tuna 1/3 cup olive oil 2 small yukon gold potatoes 2 eggs 3 garlic cloves, thinly sliced lengthwise 2 Tablespoons fresh sqeezed lemon juice 12 gf kalamata olives, pitted 1 celery rib, sliced 6 ounces fresh baby spinach Salt and freshly ground pepper Cayenne
Directions
Prepare grill.
Lightly spray tuna with olive oil. Season with salt, pepper and a dash of cayenne.
Grill over high heat for about 5 minutes per side, or until done (tuna should have a trace of pink in center). Set aside.
Cut roasted peppers into thick strips; set aside in a bowl.
Peel potatoes and cut into quarters. Place potatoes in a saucepan of lightly salted water. Bring to a boil. Once boiling, reduce heat and simmer for 10 minutes or until tender. Drain and rinse with cold water. Set aside.
Meanwhile, put eggs in a small saucepan, cover with water and bring to a boil over high heat. Once boiling, reduce heat and simmer eggs for 8 minutes. Remove, drain and rinse with ice water. Peel eggs, cut in half; set aside.
In a saute pan, heat olive oil over low heat. Add garlic; cook, stirring occasionally for 10 minutes or until garlic is browned. Remove from heat and let cool for 10 minutes. Strain garlic, reserve oil in a small bowl.
Stir lemon juice into garlic infused olive oil. Add 1/4 teaspoon salt and pepper and a pinch of cayenne.
Slice tuna into bite-size pieces and place in a large bowl. Add potatoes, olives and celery; mix gently. Add 1/2 the garlic dressing and toss. Season to taste with salt, pepper and cayenne.
Add 1/2 of remaining garlic dressing to roasted red peppers; toss to coat.
Place spinach on plates; drizzle remaining dressing over spinach. Top each plate with tuna mixture. Arrange roasted peppers and egg halves on perimeter of plates. Sprinkle with garlic chips. Serve immediately.
