Ingredients
1-1/2 cups gf flour 1 teaspoon baking powder 1/4 teaspoon salt 1/4 cup milk 1/4 cup fresh lemon juice Zest of two small lemons 6 Tablespoons butter, softened 2/3 cups sugar 2 eggs, beaten 2/3 cup fresh blueberries Powdered sugar for sprinkling
Directions
Preheat oven to 350 degrees F.
Grease an 8"x8" baking dish.
Mix together flour, baking powder and salt; set aside.
In another small bowl, combine milk, lemon juice and zest.
In a large bowl, beat butter and sugar on high speed until lightened in color and texture. Gradually beat in eggs. Add flour mixture and milk mixture alternately to egg mixture in three batches. Fold in blueberries. Scrape batter into baking dish and bake for 35 minutes, or until an inserted toothpick comes out clean. Cool, cut into squares and sprinkle with powdered sugar.
