Blackberry Crepes w/Cream Cheese

Ingredients

1 batch crépes
5 cups fresh blackberries, divided (you can also use frozen)
3/4 cup water, divided
1/3 cup sugar
1 Tablespoon lemon juice
2 teaspoons cornstarch
1/4 teaspoon ground cinnamon
1 Tablespoon unsalted butter
1/2 cup gf cream cheese, softened
Powdered sugar
Directions
Prepare 1 batch of crépes.

Using a blender or a food processor, blend
1 cup blackberries and 1/2 cup water until smooth. Strain through a sieve.

In a medium saucepan, combine strained juice with 1/4 cup water, sugar, lemon juice, cornstarch and cinnamon. Bring to a boil. Cook for 1 minute over medium heat. Remove from heat and whisk in butter until thoroughly melted and mixture has emulsified.

To assemble, place one crépe on a flat plate. Spread with 1 tablespoon cream cheese and top with 2 teaspoons sauce and a few fresh blackberries. Roll filled crépe and place seamside down on plate. Spoon 2 tablespoons sauce over top and sprinkle with powdered sugar. Garnish with a couple fresh blackberries. Repeat process with remaining crépes.
Tips
This recipe only makes about 8 crepes which you would think would feed 4 normal people...however, they are so good you may want to double it - everyone will be begging for more!
