BBQ Baked Beans

Ingredients

1-1/2 cups dried small red beans, rinsed and picked over
5 slices thickly sliced bacon, cut into a 1/2 inch dice
1 large green bell pepper, diced
1 small red onion, diced
2 medium celery ribs, diced
1/2 jalapeno pepper, minced
2 garlic cloves, minced
1-1/2 cup gf chicken broth
2 cups BBQ sauce
3 oz. tomato paste
1 Tablespoon molasses
Directions
Soak the beans overnight in a large bowl of cold water. Drain and rinse.

Place beans in a large pot, add cold water to cover generously. Bring to a boil. Reduce heat and simmer until tender, about 1 hour.

Meanwhile, in a large dutch oven, cook bacon over medium high heat, stirring occasionally, until crisp. Remove and set aside. Add green peppers, onions, celery, and jalapeno to pan and saute over medium high heat for 3 minutes. Add garlic and continue to saute for 2 minutes. Stir in reserved bacon and chicken stock, barbecue sauce, tomato paste and molasses. Simmer, stirring occasionally, for 15 minutes.

Preheat the oven to 400 degrees farenheit. Drain the beans and add to dutch oven. Bake for 1 hour, stirring, gently every 15 minutes. Adjust seasonings to tase with salt and freshly ground black pepper.
