1 small onion, chopped 1 clove garlic, finely chopped 2 Tbsp butter 2 Tbsp vegetable oil 4 chicken breasts, boned, skinned, and cut into 1" pieces 1 tsp salt 1/4 tsp pepper 2 Tbsp fresh, chopped cilantro
Saute onion in butter and oil until translucent. Add garlic, saute 1 minute more. Add chicken, salt and pepper. Cook and stir over medium heat until nicely browned, about 5+ minutes, stir in cilantro. Serve over rice.
Tip: This is a very simple, quick and tasty meal. You will have best results by making sure the chicken is well browned.
