1 Tablespoon gf plain yogurt 1 Tablespoon vegetable oil 1/2 Tablespoon lime juice 1 Tabelspoon honey 1 Tablespoon curry powder 1 teaspoon paprika 2 garlic cloves, minced 1/2 teaspoon salt 2 chicken breast halves, boneless 7 skinless, cut into 1/2" strips Bamboo skewers (soaked for 30 minutes in water)
Cilantro for garnish
In a medium bowl, combine yogurt, vegetable oil, lime juice, honey, curry, paprika, and garlic. Mix well. Add chicken strips. Toss to coat. Let sit at room temperature for 1 hour or cover and refrigerate for up to 4 hours.
Season and preheat grill.
Thread chicken on skewers. Season with salt.
Grill chicken skewers, turning once, until grill marks appear and chicken is just firm to touch.
Place on serving platter and garnish with cilantro.
