Sweet Baby Chops

Ingredients

1-1/2 pounds pork medallions, 3/4" thick

For Marinade:
3 Tablespoons sherry, or rice wine
2 Tablespoons gf soy sauce
2 teaspoons cornstarch

For Sauce:
1/4 cup gf catsup
2 Tablespoons rice vinegar
1 Tablespoon gf soy sauce
1 Tablespoon gf Worcestershire sauce
1/2 teaspoon gf hot pepper sauce
1 Tablespoon sugar

2 Tablespoons vegetable oil
1 egg, lightly beaten
2 teaspoons cornstarch
1 Tablespoon cilantro, chopped
Directions
Cut the pork into 2" squares and flatten with a meat mallet to 1/4" thick. Combine marinade ingredents add pork and marinate for 2 hours in refrigerator.
Just before cooking, add egg and 2 teaspoons cornstarch to pork, mix well. Place a wok or large heavy skillet over high-heat until hot. Add 2 Tablespoons of oil, swirling to coat all sides of pan. Cook pork until browned, about 2 minutes on each side. Add the sauce and cook for 30 seconds, coating the pork with the sauce. Sprinkle with cilantro before serving.
