Chorizo Stuffed Ravioli w/Tomato-Basil Coulis

Chorizo filling:
1 cup boneless pork spareribs, diced
3/4 cup cooked white rice
1/2 teaspoon jalapeno pepper, minced
1 garlic clove, minced
3/4 cup chorizo sausage
1/4 teaspoon fresh oregano, chopped
1/2 teaspoon cider vinegar
1/8 teaspoon chili powder
Dash of cayenne
Dash of salt

Tomato-basil coulis:
2 Tablespoons olive oil
1/2 cup onions, minced
1 garlic clove, minced
2 Tablespoons tomato paste
3/4 cup red wine
4 plum tomatoes, peeled, seeded and chopped
2 cups gf chicken stock
2 basil sprigs
1 thyme sprig
1 bay leaf
Salt and freshly ground pepper to taste
Sugar to taste

1 recipe basic pasta dough
1 recipe of gf pico de gallo
Directions
To make filling:
Place pork and rice in a food processor; process until smooth. Add remaining filling ingredients and pulse until blended. Remove, cover and refrigerate.

Prepare tomato-basil coulis:
Heat olive oil in a medium saucepan over medium heat. Add onions and saute until tender. Add garlic, saute briefly. Add tomato paste and allow it to caramelize briefly. Add red wine, tomatoes, stock, basil, thyme and bay leaf. Simmer for about 45 minutes. Discard herbs.

Puree mixture in a food processor until smooth. Adjust seasonings to taste with sugar, salt and freshly ground black pepper.

Return to pan and keep warm over low heat.

Prepare pasta according to pasta dough recipe. Roll out into thin sheets (as you would lasagna). Cut sheets into 3" diameter circles. Keep circles covered until they are ready to be filled.

Brush circles lightly with water. Place
1 teaspoon of filling onto each pasta circle. Fold circles in half and crimp edges with tines of a fork to seal them.

Prepare pico de gallo.

Bring a pot of salted water to a boil. Add pasta circles and simmer for approximately
5 minutes.

To serve, pool tomato-basil coulis on each plate. Place pasta circles on coulis and garnish with fresh pico de gallo.

Tips
Although this recipe is not difficult, it does require a lot of steps. Don’t let this deter you, however, it is absolutely delicious!
