Serves 4 to 6 Difficulty
1/2 cup lentils, rinsed 2 Tablespoons vegetable oil 1 garlic clove, minced 1/2 teaspoon cumin seeds 1 cup basmati rice 2 cups gf chicken broth 1/2 teaspoon salt
In a heavy saucepan add lentils to boiling water. Boil for 10 minutes and drain.
Heat saucepan again over low heat and add oil. When oil is hot, add garlic, cumin seeds,lentils and rice. Cook for 1 minute then add broth and salt. Bring to a boil; cover and reduce heat to medium-low. Cook for 15 minutes. Uncover and let stand for 5 minutes. Serve.
