Shrimp Crépes

Ingredients

1 pound small shrimp
1 Tablespoon lemon juice
3 Tablespoons parmesan cheese, grated
2 Tablespoons chives, minced and divided
2 Tablespoons gf mayonnaise
3 Tablespoons sour cream
Salt and white pepper to taste
1 recipe crépes (Note: omit sugar in this recipe)
2 Tablespoons melted butter
Directions
Make batter for crépes. Let sit for 20-30 minutes.

Boil shrimp in salted water until just opaque. Drain and chop.

In a medium bowl combine lemon juice, parmesan, 1 tablespoon chives, mayonnaise, sour cream, and shrimp. Mix thoroughly. Season to taste with salt and white pepper.

Spoon 1 tablespoon crépe batter into a hot crépe pan. (Final size of crépes should be about 3" in diameter.) When edges are lightly browned flip crépe and continue to cook until crépe is lightly browned on both sides.

Preheat broiler.

Place 1 tablespoon shrimp mixture in center of crépe circle. Fold in half. Repeat with remaining crépes.

Brush tops of crépes with butter and place under broiler until lightly browned. Garnish with remaining chives.
