3 cups gf chicken broth 1/4 cup onion, chopped 1/2 pound hot Italian sausage 1/2 cup dried gf pasta, (almost any type will work) 2 Tablespoons Italian parsley, chopped 1/2 cup diced tomatoes Parmesan cheese Salt and pepper to taste
Pour chicken broth into a large heavy saucepan and bring to a boil over medium-high heat. Add onions, tomatoes and 1 Tablespoon parsley. Reduce heat to simmer. Form small balls out of sausage and add to the simmering soup. Add pasta and let cook for 30 minutes. Pour soup into bowls and garnish shredded Parmesan cheese and parsley.
