One 3 pound chicken Gf flour 2 Tablespoons butter 2 Tablespoons olive oil 1-1/2 cup gf chicken stock 1/2 ounce semisweet gf chocolate, melted 1/2 teaspoon cinnamon 1/2 cup blanched almonds, chopped 1/2 cup onions, finely chopped 1 cup carrots, grated 1/2 cup raisins 12 prunes, pitted Salt and pepper 2 Tablespoons parsley, chopped
Preheat oven to 325 degrees F. Season chicken with salt and pepper, then dredge with flour. Melt butter and oil in a large heavy skillet. Add the chicken and brown on all sides. Remove chicken to an oven-proof dish. Add 2 Tablespoon flour to the pan and the drippings and cook until browned, stirring constantly. Blend in chocolate, cinnamon and season to taste with salt and pepper. Stir in remaining ingredients and pour oven chicken. Bake, covered, for 1 hour. Garnish with parsley.
This dish is wonderfully aromatic, delicious and easy to make. Serve it for company or any special occasion.
We used Scharffen Berger's Chocolate (can be found in gourmet, specialty or health food stores) but you can use Hershey's semi-sweet chocolate or any other gf dark chocolate.
