6 Tablespoons unsalted butter, cold 1/2 cup polenta 2 Tablespoon gf flour 1/3 cup sugar Zest of one orange, finely chopped 1 large egg
In a medium bowl, combine polenta, gf flour and sugar. Cut in butter until it resembles coarse meal. Add egg and orange zest; stir until thoroughly blended. Cover with plastic wrap and chill for 1 hour.
Preheat oven to 375°F.
Place wax paper or parchment paper on a cookie sheet. Drop small teaspoons of batter onto cookie sheet, about 2 inches apart. Bake 8-10 minutes or until edges are golden. Let cool for 15 minutes before serving.
