Fried Cod w/Tomatoes & Onions

Ingredients

4 cod filets
2 lemons
3 zucchini
1/4 olive oil
1/2 cup onion, chopped
2 cups gf tomato sauce
1/2 teaspoon harissa
1/2 teaspoon garlic, minced
1 egg, beaten
Gf flour for dredging
Oil for frying

For harissa:
2 Tablespoons crushed red pepper flakes
1 garlic clove, peeled
1/2 teaspoon caraway seeds
1/4 teaspoon ground cumin
1 tomato, peeled, seeded and chopped
Salt
Olive oil
Directions
For harissa:
In a food processor combine all ingredients, except olive oil, and process until well blended.

Put mixture into a container with a lid and cover with a layer of olive oil. Cover container and refrigerate.

Salt and pepper filets and sprinkle with lemon juice.

Peel zucchini and slice into 1/4" rounds.

Heat oil in a heavy skillet and fry zucchini until lightly browned on both sides; remove to paper towel to drain.

Add onions to skillet and saute until soft. Add tomato sauce, harissa, garlic, salt and pepper. Cook uncovered over medium-high heat for about 5 minutes.

Return zucchini to pan and cook an additional 5 minutes.

In another heavy skillet, heat about 1/2" oil to hot.

Dip filets in flour, egg and flour again and fry until browned on both sides; drain on paper towel.

Add juice of remaining lemon to sauce and adjust seasonings. Serve fish with sauce.
Tips
Harissa is a spicy Tunisian sauce. It is traditionally used with couscous, in salads or as a sauce for kebabs.
