1 pound russet potatoes, peeled and diced into 2 inch pieces 1/4 cup milk 1-1/2 Tablespoons gf feta cheese 1 Tablespoon gf sour cream 1/4 teaspoon dried thyme Salt and freshly ground black pepper
Place potatoes in a large saucepan. Cover with water and bring to a boil. Cover saucepan, reduce heat and simmer for about 20 minutes or until potatoes are very tender.
Drain potatoes. Place potatoes in a large mixing bowl. Beat with an electric mixer until smooth. Add gf feta, milk, sour cream and thyme. Adjust seasonings to taste with salt and freshly ground black pepper.
