Lime butter sauce: 2 garlic cloves, minced Zest of 1/2 lime Juice of 2 limes 1/2 cup unsalted butter (1 stick, melted Salt and freshly ground black pepper to taste
For the salmon: 1-1/4 lb. salmon fillet Olive oil cooking spray Salt and freshly ground black pepper Fresh cilantro, chopped
Directions
Puree the garlic, lime zest and lime juice in a food processor until smooth. With the motor running add the melted butter and blend until emulsified. Season to taste with salt and freshly ground black pepper. Set aside.
Preheat the grill.
Spray both sides of the salmon fillet with olive oil and season the flesh side with salt and freshly ground black pepper. Place the salmon on the grill, flesh side down first, for about 4 minutes, then turn. Sprinkle the top of the salmon with fresh cilantro and continue to grill for another 4-6 minutes or until the fish flakes easily with a fork.
Transfer the salmon to a platter and drizzle some of the lime butter sauce over the top. Tent loosely with foil and let the salmon rest for 5 minutes before serving. Serve additional lime butter sauce along-side the salmon.
