As
the end of summer approaches, so does the seasonal variety
of fresh berries that weve enjoyed all summer long.
Summer berries find their way into just about all of our cooking
during this time of year, in breakfasts, baking, entrees and
in numerous other marriages with other ingredients.
This
month we bring you two new exciting naturally gluten-free
berry recipes to add to your berry treasure chest. Raspberry
Soufflé is an incredible dessert; airy, light and
a delicious taste sensation. These little pink puffs are the
adult version of cotton candy. The ramekins are set in a pool
of custard sauce that complete the beautiful presentation
of this dessert.
Raspberry Soufflé can also be served
without the custard sauce, for those avoiding dairy.
Fresh
Berry Gratin is not only fabulous and naturally gluten-free,
it is also naturally casein free. Although simple in its preparation,
it does take a bit of wrist stamina, as the egg batter must
be whisked over simmering water to achieve the correct consistency.
Browned for 30 seconds under the broiler, this dessert is
as inviting to look at as it is to eat!
So, now that berry season is coming to an
end, must we wait an entire year to enjoy them again? Absolutely
not! Berries freeze beautifully. The trick to freezing fresh
berries is to freeze them in a single layer on a baking sheet
or jellyroll pan. Once they are frozen, transfer them to large
sealable plastic bags and return them to the freezer.
We
stock our freezers with pitted cherries, strawberries, blackberries
and blueberries and enjoy these sweet little jewels all year
long.
