Back to school means back to busy schedules with less time for everything including food preparation.
Add in the challenge of cooking without gluten and things get a little tricky. We’ve had fun this month experimenting with a great short cut that can make those hurried breakfasts and even lunches a snap; frozen gluten-free waffles. Why waffles? Convenience and availability. We know it can be challenging to find a good gluten-free bread and it is not something that in a pinch, you can just run to the local store and buy. But you can keep a supply of frozen gluten-free waffles in the freezer. They are also widely available at many mainstream grocery stores across the country. Gluten-free waffles are available with buckwheat and flax, making them not only easy but a nutritious choice as well. So what can you do with a waffle besides drown it in syrup? Just about anything you can do with bread and as a bonus, the little indentions are perfect for holding butter or other toppings.
