It seems this time of year zucchini begin infiltrating our lives from virtually everywhere! They appear at the office as they are passed around to anyone who will take them, they are given as house gifts at dinner parties, they are left in mailboxes as a special bonuses to one’s mail (I do this) and then there is of course fair entries for the longest, cutest and heaviest and let’s not forget zucchini races that pop up all summer long in yet another creative attempt to utilize this prolific vegetable.
All this heightened zucchini creativity usually begins to flourish after one has exhausted every zucchini recipe in one’s repertoire. So, as I see it, there are two courses of action; risk a federal indictment for tampering with the mail or find a new collection of zucchini recipes that are so divine, everyone will overlook the fact that they are made with zucchini.
