Lunch on the Go
As anyone with a food allergy knows, sometimes the most stressful part of your work day can be going out to lunch! The easiest and safest choice is just to bring your own brown bag lunch- whether to the office or sending with your kids to school. Here are three incredibly quick and easy gluten free & dairy free lunch ideas for you and your family.
Quick & Easy Egg Salad
Serves 1
- 1 hardboiled egg, peeled and chopped
- 2 Tbsp mayonnaise
- 1/2-1 tsp Dijon mustard (to taste)
- 1/4 tsp paprika, sweet or smoked
- 1/4 tsp fresh chives, minced
- Salt and Pepper to taste
Combine all ingredients in a small bowl, mixing well. Serve on your favorite sandwich bread (like Udi's, Glutino or Canyon Bakehouse), as a salad over lettuce or in a lettuce wrap.
OAT - Onion Avocado Tomato Sandwich
Serves 1
- 1/2 avocado, thinly sliced
- 1/2 (heirloom) tomato, sliced
- 1/4 sweet onion, thinly sliced
- 1 Tbsp mayonnaise
- 2 slices of your favorite gluten free sandwich bread
Divide mayonnaise between two slices of bread and spread thinly. Build your sandwich my layering slices of avocado, tomato and sweet onion slices. Top with second slices of bread and enjoy!
Curried Chicken Salad
Serves 1
- 1 chicken breast, cooked and shredded
- 2 Tbsp mayonnaise
- 1 tsp curry powder (like Sun Brand Madras Curry Powder)
- 1 Tbsp raisins or dried currants
- 1 Tbsp toasted nuts (blanched almonds - chopped, pine nuts, pecans)
- 1/2 tsp lemon juice
- Salt and Pepper to taste
Combine all ingredients in a medium bowl, stirring well to combine. Serve between slices of your favorite gluten free sandwich bread, over lettuce or in a wrap.
