Summer means vacation, vacation means camping trips and camping trips mean S’mores! Although we have made our own gluten-free graham crackers with great results, we haven’t found one on the market that really tastes like a graham cracker, which pretty much eliminates the possibility of enjoying a S’more over a campfire. OK, I must admit, I have roasted marshmallows and placed the half-charred, gooey glob between two pieces of a Hershey bar and although it’ll do, it’s still not a S’more and it’s a whole lot messier!
But leave it to the Girl Scouts, the masters of a perfect camping trip! My son recently shared the Girl Scouts version of a Banana S’more and it is out-of-this-world! (FYI, my son is not a girl scout but rather a foodie who happened to come upon the recipe-just wanted to clear that up in case he reads this) The Girl Scouts version is also gloriously gluten-free!
Here’s how you do it:
Ingredients:
- 1 banana
- 2 large marshmallows
- 1 Hershey bar
Directions:
Hold a banana so that it curls upwards in your hand. Peel back just the top segment of the peel; do not peel all the way off. With a spoon, carefully scoop out the center of the banana creating a hollowed canoe shape banana; do not scoop down to the bottom peel. Eat the scooped out banana. Cut marshmallows into fourths and break the chocolate bar into segments. Place a marshmallow piece and chocolate piece in the banana groove alternating marshmallow, chocolate, marshmallow, chocolate, etc. until the space is filled up. Replace the peeling, covering the filling up. Wrap the banana in foil and place next to the camp fire for about 15 minutes. (You can also do this in the oven at 350 degrees F. for 10 minutes) Remove the foil, peel back the pre-peeled segment of the peel and eat with a spoon. The combination of flavors is fantastic, we think better than a traditional S’more!
