Back to School!

Eating gluten-free is a difficult challenge for adults and an even bigger problem for kids. As we get ready to send our kids off to school this month, we face the issue of what to make for lunch for those kids unfortunate enough to have Celiac or gluten intolerance. More importantly, Glutenfreeda wanted to come up with some sack lunches that provide nutritional value and simply put - kids will eat and enjoy.

Sandwiches

Sandwiches are usually the best bet for kid’s lunches, however, we all know that it is difficult to come by a good, gluten-free sandwich bread that will withstand the four-five hours in the sack, not crumble when eaten, and more importantly kids will like. Recently we found a delicious, easy sandwich bread mix made by the Gluten-Free Pantry. (See this month’s Product Test Review for a full review on this bread.) This discovery solved a lot of problems and opened up a whole new world of options for balanced kid’s lunches. Below are some delicious sandwich ideas your kids will love.

Peanut Butter & Jelly Sandwich with a Twist

Gf Peanut Butter (Jiff, Skippy, Smuckers Natural Peanut Butter — all gf)
Strawberry jam (Welches, Smuckers — gf)
Banana slices
Strawberry slices
2 slices bread (Gluten-Free Pantry Sandwich Bread)

Spread 1 slice of bread with peanut butter. Place strawberry slices and banana slices on top peanut butter. Spread jam on remaining slice of bread and fold sandwich together.

(serves 1)

Turkey Sandwich with Grape Relish

Gf cream cheese
Turkey slices (Louis Rich Carving Board Smoked or Oven Roasted Turkey, Oscar Mayer Free (Fat Free) Smoked Turkey Breast — gf)
Lettuce
Gf mayonnaise
Grape Relish
2 slices bread (Gluten-Free Pantry Sandwich Bread)

Spread 1 slice of bread with cream cheese, the other with gf mayonnaise. Top with turkey slices, lettuce and grape relish and fold sandwich together. (serves 1)

Turkey Salad Sandwich

1/4 cup celery, finely chopped
2 Tablespoons walnuts, chopped
1-1/2 Tablespoons Craisins
4 Tablespoons gf mayonnaise, divided
1 Tablespoon gf plain yogurt
1 teaspoon cider vinegar
1 red apple, cored and diced
1/4 lb. Roasted turkey, diced
lettuce
4 slices bread (Gluten-Free Pantry Sandwich Bread)

In a medium bowl, combine celery, walnuts, Craisins, gf mayonnaise, vinegar, apple and turkey. Spread mayonnaise on gf bread slices, top with turkey salad mixture and fold sandwich together. (serves 2)

Other

Egg Salad with gf Crackers

3 hard boiled eggs, chopped
2 Tablespoon gf Ranch Dressing (Hidden Valley fat free or regular — gf)
2 Tablespoons gf plain yogurt
1/2 small carrot, grated
2 Tablespoons celery, chopped
salt and pepper

Combine all ingredients. Adjust seasonings to taste with salt and pepper. Serve with gf crackers (ie. Glutano crackers).

To keep cool place a freezer pack or a frozen box of fruit juice in the bottom of the lunch box.

Chebe Pizza

Kids love cold pizza….slice and wrap.

Tomato Soup

Pour hot in a thermos.

Vegetable Sticks with gf Ranch Dressing (Hidden Valley — gf)
Fruit Salad
Hard Boiled Eggs
