Freezing
Berries
Living
in the great Northwest, we are fortunate to have a wide variety
of sweet, succulent wide berries growing literally in our back
yards. Summer brings the sweet ripening of blackberries, blueberries,
strawberries, huckleberries and raspberries to our tables. There
are many ways to preserve berries for later use such as canning,
making preserves or freezing. Freezing berries is so easy, it
is a shame not to stick a few bags of frozen berries into your
freezer to enjoy during the winter months.
To freeze
berries:
Rinse, drain
and allow the berries to dry. Spread the clean, dried berries
onto a baking sheet in a single layer, not letting the berries
touch. For strawberries, trim the crowns before freezing. Place
the baking sheet in the freezer and freeze for several hours.
Transfer to plastic freezer bags or airtight containers and return
to freezer. You can use the frozen berries right out of the freezer.
