Pan-Seared Tuna

Pan-searing or pan-grilling is a quick, easy and delicious way to cook meats and fish. Pan-grilling means to cook at high heat with no fat or liquid. It is perfect for fish that contain fat such as salmon, tuna or swordfish. The technique is very simple and produces quick and delicious results.

To pan-sear or pan-grill, preheat a heavy skillet over medium-high heat until the pan is hot; then add the fish. Brown the fish, turn and brown the other side. Press down with a spatula on top the fish to test for doneness. If the fish is firm on the outside but gives a little, it is done. Do not over-cook. Remove fish from pan and serve immediately, or cover to keep warm.
